The recurring items are cutting / portioning templates and guides, knife scabbards, blade guards and holsters, boning-saw guards, and portioning and sizing rings. This vertical teaches you to think like a materials engineer. The parts sit in constant wet, steam, caustic and acid-wash conditions, and anything near the product is a food-contact surface. Build the recommendation matrix: food-safe PP or PETG for anything contacting meat or in product zones; PC for impact and thermal-shock resistance (PC stays tough through thermal cycling and resists shattering — important for cutting and boning areas); rigid TPU for anything that must flex, seal or take a hit; PA-CF for stiff structural guides.
